Tomato Tortellini Soup

Sometimes I read recipes that I think just won't work for my kids. But I still make them in hopes that they will and sometimes I am wildly successful. Such was the case with the following...I hope you can try it and have similar success:

onion, garlic, and mushrooms, diced (if you like them)
1 Jar your choice spaghetti sauce
1 small can tomato paste
water
basil
Italian sausage--precooked into little "meatballs"
Cheese Rainbow tortellini
fresh green beans, pre-cooked, or frozen (if you like them--they look pretty in the soup)


Add the tortellini at the very end (they take 6-8 minutes to cook).
My family DEVOURED this meal. I couldn't understand why because they usually turn up their noses at spaghetti sauce, but as a soup it was so different. If you don't have tomato paste you can use tomato soup. And add lots of water so it's not too sauce-y, if you know what I mean.

  1. Mmm, this sounds quite good--and best of all, easy! So, do you buy the Italian sausage ground up, and then make your own little meatballs out of it first? (Do you bake them or fry them?) Or--did you mean, you buy it in little meatballs?

    Watch out for that soup, it's getting a bit saucy!

  2. my saucy friend: you buy the sausage in links, and as you squeeze it out, it kind of naturally clumps in little "meatballs" Yo ureally only need one link for this soup--then it won'ttake over. gluck!
